Peanut Butter Chocolate Chip Energy Balls! Yes please! This treat is delicious and healthy! It’s perfect for breakfast, a snack, or dessert. Plus, you can whip them up quickly and they are no bake.
My husband and I absolutely love these! They don’t last long in our house, but that’s okay because they are super healthy. I love that they are packed full of protein and fiber. You can also alter this recipe based on what you have in your pantry. If you don’t have chia seeds, just add more flax seeds. If you don’t have peanut butter, almond butter or another nut butter will work perfect. No mini chocolate chips? No worries, just cut up regular chocolate chips into smaller pieces or omit them entirely. These energy balls turn out delicious every time. Enjoy! 🙂

- 1/2 cup creamy peanut butter
- 1/4 cup honey
- 1 tsp. vanilla extract
- 1 cup old fashioned quick oats
- 2 Tbs. ground flax seed
- 1 Tbs. chia seed either whole or ground
- 1/2 cup mini chocolate chips 1/4 cup will go in the energy balls and 1/4 cup will be melted and drizzled over the top.

- Mix all of the ingredients together in a medium bowl (remember to reserve 1/4 cup of the mini chocolate chips).
- Refrigerate the mixture for approximately 30 minutes. This will make it easier to roll the balls.
- Use a Tablespoon to scoop out the mixture and roll into balls. You should get approximately 14 energy balls.
- Using a microwave safe bowl, microwave the remaining 1/4 cup of the mini chocolate chips. Once melted, dip the top of the energy balls in them. Let rest on the counter or in the refrigerator until the chocolate is set. You can store these energy balls in an airtight container in the refrigerator for up to a week - if they last that long! 🙂
