PB Chocolate Chip Energy Balls

Ingredients
  • 1/2cup creamy peanut butter
  • 1/4cup honey
  • 1tsp. vanilla extract
  • 1cup old fashioned quick oats
  • 2Tbs. ground flax seed
  • 1Tbs. chia seedeither whole or ground
  • 1/2cup mini chocolate chips1/4 cup will go in the energy balls and 1/4 cup will be melted and drizzled over the top.
Instructions
  1. Mix all of the ingredients together in a medium bowl (remember to reserve 1/4 cup of the mini chocolate chips).
  2. Refrigerate the mixture for approximately 30 minutes. This will make it easier to roll the balls.
  3. Use a Tablespoon to scoop out the mixture and roll into balls. You should get approximately 14 energy balls.
  4. Using a microwave safe bowl, microwave the remaining 1/4 cup of the mini chocolate chips. Once melted, dip the top of the energy balls in them. Let rest on the counter or in the refrigerator until the chocolate is set. You can store these energy balls in an airtight container in the refrigerator for up to a week – if they last that long! 🙂
